How do you like your pasta?

If you were going to make pasta using any ingredients, how would you like it? What noodles, sauce, vegetables, etc.?

I would like thick spaghetti with olive oil, basil leaves, sun-dried tomatoes, fresh uncooked spinach, fancy parmesan cheese, and light touch of diced red onions.

I would definitely make that cooked spinach. Raw spinach just leaves that mossy feel on my teeth. Someday, you will step away from the Parmesan and realize that there is such a large world of other cheeses for pasta out there- like asiago, or romano, or even gouda!!! :)Good choices on a whole!

I start with a base of spaghetti noodles, then add pesto sauce and mix in emmental cheese (it's like swiss) though lately I've been trying Gouda and Edam as well. Then on top I stick a cooked egg which is something I kind of picked up from the french - they prefer them raw. I'll have to try your concoction sometime.

Liz,

You underestimate my knowledge of cheeses. I have extended out to Asiago. I find it a delicate cheese and rather difficult for me to work with. I have also tried Romano, but do not crave it as much as parmesan. I would never use the cheap powder unless I have nothing else available. I abhor the people who make noodles with tomato paste/sauce and then just throw on the parmesan sprinkle. I watch out for them:)
